Easy Tasty Dinners

I have been rather lazy these last few days so the 2 recipes below are easy, tasty, lazy food!
But my laziness is only short-lived as I will be starting my Indian Food Week tomorrow! I've been shopping for spices online and I'm going to experiment with Indian food and try to make as many different types of curries as possible, all in one week so keep checking this page!

Celeriac and Horseradish Burgers 
Celeriac Burger with Wakame Salad

In the past couple of months, we received celeriac 3 times in our veggie box (see my celeriac and cauliflower mash recipe) so I had to get creative and come up with something other than celeriac soup!
This recipe was adapted from by these celeriac and horseradish burgers.

Ingredients:
1 Tbsp olive oil
1 Celeriac weighing 400g - 500g, peeled and grated (just before using or it will turn brown)
2 Garlic Cloves, crushed
1 cup Adzuki Beans (or black beans), cooked until soft, drained and mashed
6 Spring Onions, finely sliced
2 slices of Wholewheat Bread, soaked in some milk
2 Eggs, beaten lightly 
Flour, if necessary and extra for the burgers
4 Tbsp Parsley, chopped
3 – 4 Tbsp Horseradish Sauce or fresh Horseradish, grated
Salt and pepper to taste
Oil for frying

How to:
Cook the celeriac and garlic in some oil until softened. Put into a large bowl and let cool down slightly.
Add the beans and mash it all up. Add all the ingredients (and the flour if the mix is too wet) and mix well.
Shape into small balls and flatten slightly. Dust the burgers with some flour and rest for 20 minutes.
Heat up some oil in a large, flat pan and fry the burgers a couple of minutes on each side until lightly brown.
Serve with salad, wakame salad (my personal favourite!) or any other veg.

Tamale Pie
Say what? I know some people won't cook food they can't pronounce but this dish is really worth it and so easy! Tamale pie is usually a pie made of a meat mixture covered with cornbread topping. This version is slightly different: I didn't use any meat and only had corn and soya flour instead of corn meal and it worked out well though the consistency probably wasn't quite right... You can add beef mince and use 1 1/2 cup of corn meal instead of the flour mix. Well, actually, you could use any vegetable mix in this pie - pretty much anything you've got lying around!

Tamale Pie - ready to serve

Ingredients:
1 cup Adzuki Beans (or black beans)
1 cup Mixed Beans or any type of beans you've got handy, use 2 cups total uncooked beans
1 Tbsp Olive Oil
1 Onion, chopped
3 cloves Garlic, crushed
1 tsp Chili Powder
1 tsp Coriander Powder
1 Tbsp Special Spice Mix (see the Curry post)
2 Celery stalks, chopped
1/2 cup Fresh Maize
1 Green Pepper, diced
1 Tbsp Tomato Sauce/Ketchup or Tomato Paste
1/2 cup Corn Flour
1 cup Soya Flour
2 1/2 cup Water
1 tsp Salt

 How to:
Cook the beans in enough water until soft (ideally they should be soaked overnight but I forgot to do it and they turned out alright).
While the beans are cooking, heat up some olive oil in a large pan over medium heat. Cook the onions and garlic until golden and soft.
Add the spices (1/2 tsp chilli powder, coriander and special spice mix) and cook for another minute until nicely fragrant.
Add the green peppers, celery and maize. Add a bit of water so the vegetables don't stick to the bottom of the pan. Cook until soft.
Add 2 Tbsp water and the tomato sauce. Take off the heat and keep aside.
Stir the flours, water, 1/2 tsp chilli powder and salt. Cook on low heat, constantly stirring until it starts thickening.
Spoon the beans in an oven-proof dish and pour the flour sauce over it.
Cook in an oven at 180 for 30C, until the crust has hardened and is golden.
Serve straight out the oven with mango chutney.
